Shou Mei has a pronounced taste profile - along the lines of oolong tea. Many white tea drinkers prefer Shou Mei, favouring its 'substance' compared to the delicate nuances of other white teas. This tea gives an orange liquor and a smooth mellow flavour.
Use: under boiling water - 1 tsp tea / 1 cup water / 80-85°C (176-185°F) / steep for 1-3 minutes.

The bud of Camellia sinensis is lightly steamed after picking and is immediately dried. This preserves its high antioxidant content and its subtle, sweet flavour.

Green chai is lighter alternative to the rich flavour of our other chais.
(green tea, ginger, cardamom, cinnamon, peppercorn, cloves, flavour)
Use: 1-2 heaping tsp / 1 cup water; add to boiling water; add the same amount of milk to water and boil; simmer for 1 minute; strain and serve.
Herbal Chai herbal chai
This is an alternative for those who prefer not to have caffeine.
(ginger, cinnamon bark, anise seed, cardamom, allspice)
Use: 1-2 heaping tsp / 1 cup water; add to boiling water; add the same amount of milk to water and boil; simmer for 1 minute; strain and serve.

Illex paraguarensis from South America is sipped all day. It is loaded with vitamins - especially B's, boosts the immune system plus many other beneficial functions (there are too many to list!).
Use: Fill gourd or cup with maté up to ¾ full; pour lukewarm water over the leaves; let stand for a few seconds; pour hot water (never boiling) over the leaves; keep adding hot water as you drink.
Chai Mate chai maté
All the rich flavour and energizing spices of chai but with maté.
(mate, cinnamon, citrus peels, ginger, aniseed, peppercorns, cloves)
Use: 1-2 heaping tsp / 1 cup water; add to boiling water; add the same amount of milk to water and boil; simmer for 1 minute; strain and serve.
Cranberry Mate cranberry maté
A roasted mate infused with cranberries. Very rich and roasty in flavour with a strong cranberry taste. Another substitute for coffee.
Use: Pour lukewarm water over the leaves; let stand for a few seconds; pour hot water (never boiling) over the leaves; keep adding hot water as you drink.
Roasted Hazelnut Mate roasted hazelnut maté
A roasted mate infused with a rich hazelnut flavour. Very rich and roasty in flavour. Best substitute for coffee. ***ALERGY ALERT--CONTAINS NUTS***
Use: Pour lukewarm water over the leaves; let stand for a few seconds; pour hot water (never boiling) over the leaves; keep adding hot water as you drink.
